Having 6 children, our life is busy..  I’m sure most parents can relate.

This is a typical 5:00 p.m. conversation…
Kids: What’s for dinner Mom?
Me: I don’t know! I just walked in the door.
Kids: I’m hungry. I’m really really hungry!!!

 

My kids LOVE tacos.. Some like all the toppings.. Some don’t.  I love tacos because it’s a quick meal to make.  In fifteen minutes, its done.  While the meat, onions & garlic are cooking, I chop the tomatoes & lettuce and set up a Taco Tray for the kids to make their own.  I love making a mini taco bar so everyone gets exactly what they want.

By adding the beans & corn it stretches out the meal to make more.

Santa Fe Tacos

Ingredients

  • 1lb ground meat (turkey, lean ground beef, etc.)
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp homemade taco seasoning (recipe follows)
  • 1 can black beans, drained
  • 1 can corn, drained
  • Tortillas: Corn or Flour
  • Toppings: Lettuce, tomato, sour cream, salsa, cheese, avocado, guacamole, onions, scallions, cilantro, jalapeños, lime wedges.

  • Homemade Taco Seasoning:
  • 2 tsp kosher or sea salt
  • 2 tbsp chili powder
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1/2 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp dried oregano

Instructions

  1. In a large saute pan, brown the meat. Add the onions and garlic. Cook until tender. Stir in the spices and cook for 1 min while stirring. Stir in the beans & corn. Serve with toppings
  2. Homemade Taco Seasoning: Combine all spices together, mix well. Store in an airtight container

There’s a bazillion spinach dip or artichoke dip recipes on the internet.  Some have mayo & cheese, some have cream cheese, some have crab, some have sour cream.  But most of them have one thing in common: the artichokes are added straight from the can or package.   When you roast any vegetable you bring out SOOOOOO much more flavor.  By roasting the artichokes, garlic & onion you have an incredible flavor before you add to your dip – I guarantee you this will blow away  any other “artichoke & spinach dip” you have ever tasted.

 Feel free to TaylorMake your own. This is MY personal favorite. The cream cheese & mayo makes a fantastic creamy base for this dip. The roasted artichokes, roasted garlic & caramelized onion are an explosion of flavor with mozzarella & parmesan cheese. Oh yeah, and there is spinach.. to make it healthy of course.

I mentioned in my last post that my kids aren’t really a fan of spinach.  OK, 3 of them are pretty much “Anti-spinach”  but all of them could care less that this dish has any at all when you taste cheesy goodness in every bite.

Pure Yummy cheesy goodness.   Serve with crispy tortilla chips, crackers or toasted baguette slices.

Roasted Artichoke & Spinach Dip

Ingredients

  • Olive oil & sea salt for roasting
  • 5 cloves of roasted garlic (recipe to roast below)
  • 2 cans (14 oz.) quartered artichoke hearts, drained
  • 2 onions, chopped
  • 6 ounces cream cheese
  • 1/2 cup Mayonnaise
  • 1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
  • 3/4 cup Grated Parmesan Cheese
  • 1/2 cup Mozzarella Cheese
  • 1 tbsp fresh parsley, chopped (optional)
  • Tortilla Chips or Crackers for serving

Instructions

  1. to roast the garlic: cut the top off the head of garlic exposing a bit of each each clove of garlic. Place garlic head in a sheet of aluminum foil. Drizzle olive oil on top, sprinkle with salt. Wrap & Seal the foil around the garlic gathering at the top. Place in the oven and roast 400* for 25 min or until completely tender when poked with a fork or knife. Remove from foil. Allow to cool. Squeeze out 5 garlic cloves from the cooled head of garlic and smash into a paste. set aside.
  2. Arrange the artichoke hearts & onions on a sheet pan, drizzle with olive oil, sprinkle with salt and roast 425* 20-25 min stirring occasionally until tender and edges start to brown.
  3. In a LARGE bowl combine the cream cheese & mayo. Stir in the smashed roasted garlic, artichokes, onions, spinach, parmesan & mozzarella. Mix together well. Pour into a casserole dish and Bake 350* for 15-20 min until golden on top. Top with extra grated cheese & parsley right before serving.

My kids used to eat spinach when they were younger until they discovered how healthy it was and how much it failed in taste comparison to sugary candy.   I used to get them to eat spinach by calling it “incredible hulk” and collard greens by naming it “tree stars” (from the land before time) but our youngest is now 11 and he caught on long ago.   Although they wouldn’t fight over the last bag of spinach, My kids really love this salad.  It’s not because they have a new found love of spinach, trust me.. It’s Probably because it is on a stick.  In my experience as a mom, you can put just about anything on a stick and a child will eat it.

or adults for that matter.

We always had some form of salad on the TaylorMade Daily Special.  Sometimes we would feature a salad off the cafe menu or create a brand new one with whatever gorgeous produce was in season.

I came up with this idea last summer for a ladies lunch I was catering.  I was asked by the hostess to create a vegan “No Fork Needed” appetizer menu and this was one of the dishes.

I used regular  wooden skewers that I cut in half.  Don’t drizzle with the balsamic glaze until right before serving.

Strawberry Salad on a stick

Ingredients

  • 1 large container strawberries, washed, dried, & stems removed
  • 1 bag baby spinach leaves, washed, dried & stems removed
  • 1/2 cup sliced candied almonds (recipe follows)
  • Balsamic Glaze to drizzle

  • For the Candied Almonds
  • 3/4 cup sliced almonds
  • 1/4 cup sugar

Instructions

  1. Place one strawberry onto a skewer and slide it down, leaving about 1-2 inches at the end of the stick. Stack 3-4 spinach leaves, fold them over and place onto the stick. repeat with remaining strawberries and spinach using 3 strawberries per skewer.. Lay the salad skewers onto a serving platter. Sprinkle with candied almonds. When ready to serve, drizzle with Balsamic Glaze.
  2. For the candied almonds: Combine almonds and sugar in a small skillet over medium-high heat; cook and stir until sugar is melted over almonds. You will be constantly stirring, so don’t plan to go anywhere for the next 3-5 minutes. Spread almonds in a single layer on waxed paper to cool.

I love having lunch with my mother and before opening TaylorMade Market, we did our share of “dining research” from all the local places to eat.  I specifically remember a Bistro, I won’t say the name…It’s not a good memory.  This particular experience was a lesson in what I didn’t want my restaurant to be. We sat down to order and there were only 2 vegetarian choices for me.   I ordered the vegetable quiche, my mother ordered a chicken salad sandwich.  45 minutes later, we were finally served a slim slice of quiche with 2 grapes on the side and a small croissant with a scoop of chicken salad made with canned chicken.  ALL of the vegetables in my quiche were raw and crunchy and the pastry was dry and bland.  It tasted of only egg & raw veggies.  I knew quiche was a very popular breakfast item that I wanted on my menu but I already had a swiss chicken quiche and my mom was trying to convince me to only have one.. I wanted a vegetarian option so I thought a roasted vegetable frittata would be great.. It was.  The other thing I didn’t like about the bistro was we spent $28 for 2 on lunch. While we were walking to the car, I said “I’m still hungry!” She replied, “Me too”.  What a shame to spend $28 for a meal and still leave hungry.   I NEVER wanted any of my customers to have that experience, so we always offered large portions of all our dishes and our most expensive item was $9.95 that included a Main Dish, any 2 sides, a homemade biscuit & drink.

So today, I’m going to share with you another one of my (and many others) favorite vegetarian recipes.  This is a great hearty breakfast that won’t weigh you down or perfect for a healthy light lunch with a salad.

What exactly is a frittata?  It’s basically a crustless quiche.

 This recipe was such a favorite in our restaurant, we added it to our daily lunch menu by request of customers.  I used to make a minimum of 10 of these per week.  I could do it with my eyes closed…as long as I had all the ingredients at hand.

FULL DISCLAIMER – One of the reasons this recipe taste so amazing is because majority of the ingredients are either roasted, caramelized or sautéed before baking.  PLEASE do not attempt this recipe with raw ingredients.. It will NOT taste the same.

I LOVE roasting vegetables.. It brings out the naturally sweetness in just about anything.  When you start with roasted peppers, caramelized onion and sautéed mushrooms,  you know it’s going to be good.

I’m able to put this together in a short amount of time because I always have roasted peppers and caramelized onions on hand.  It’s easy to do and saves me TONS of time in the kitchen and adds incredible flavor to any dish.  I wrote a post on roasting the easy way.. No worries if you don’t have them on hand.. I have written the recipe from start to finish…

Roasted Vegetable Frittata

Ingredients

  • 4 tbsp olive oil, divided.
  • 1 red pepper, chopped
  • 1 onions, chopped
  • 6oz. baby bella mushrooms, sliced
  • 6 oz. spinach leaves
  • 4 oz goat cheese, softened at room temperature
  • 8 eggs, beaten
  • 1/4 cup of half & half or heavy cream
  • 3 tbsp sundried tomato in oil, chopped
  • 2 tbsp herbs (parsley & basil)

Instructions

  1. Arrange the chopped peppers & onions on a sheet pan, drizzle with 2 tbsp olive oil, sprinkle with salt and roast 425* 20-25 min stirring occasionally until tender and edges start to brown.
  2. In a saute pan, heat the remaining 2 tbsp olive oil and sauté the mushrooms for 3-5 min until tender. Place mushrooms in a bowl and set aside. In the same sauté pan, add spinach and heat just until bright green and slightly wilted. Remove from heat, set aside.
  3. In a LARGE bowl combine the room temperature goat cheese, eggs & half & half (or cream). Mix together well. Add the cooled ingredients: roasted peppers & onions, sautéed mushrooms, spinach & sundried tomatoes, herbs. Stir well to combine.
  4. Pour into a casserole dish or pie plate that has been sprayed with non-stick cooking spray and bake 350* 25-30 min until lightly browned on top and set in the middle. Allow to cool before cutting.

Drunk Wedding Stories.  Just about every wedding has one.  In some cases, it’s the bride or groom.  Drunk Adults are not an unusual sight but a shit-bombed 6 yr old is.

A few weeks ago, I attended a “friend of a friends” wedding.  Lots of children were there.  They had a beautiful champagne punch fountain at the reception that was flowing from every angle.  I can only imagine how cool it was for the kids.

I didn’t even realize what was happening until we were sitting at our table, eating with another couple and their 2 young children.  I watched one child wave Hi & Goodbye to every single piece of confetti on our table, I thought this was odd but maybe he was bored.  Then I Listened to another child slurring his words.  I watched him get up and stumble all the way to the other glassy eyed group of children. If you have ever seen a child that is drunk, it’s not cool.  I was so incredibly uncomfortable.  As I looked at the other children, buzzing around, (pun intended) gulping the lime green bubbly punch like it’s kool-aid, I felt stuck in some matrix movie, I looked at my friend and said “is this really happening?”   How do the parents not notice?  They are drinking the same freaking punch…

A few minutes went by and the child returned to our table with another glass.  I couldn’t take it. Now,  I didn’t want to ruin this wedding reception but I had to say something, at least to the couple at our table with children. Wouldn’t you? Maybe I’m alone on this one.  “Excuse me, I think there is alcohol in your childs drink”

Uncomfortable Moment #2 – Apparently the couple was a good friend of the bride & groom.  The lady was so upset that I would ever suggest the wedding couple was serving alcohol to children she replied “you don’t know what you are talking about, who are YOU anyway?”.

I wanted to say “WTF kind of mother are you, allowing your child to drink alcohol?”  But I didn’t..   I just took a deep breath.. a couple of them

The attention was now on the bride & groom cutting their cake – I thought for a brief moment, maybe I should have kept my mouth shut.  Nah. As I gathered my things to leave, I looked up and saw something that would ruin the day far more than my mouth.  “Excuse me, mam, you may want to turn around, your child just puked on the wedding cake.”   I heard the bride cursing as I left.  All I could think was… It’s a good thing you are such good friends..

Just for the record….

Now, There was no other drink to choose from.  No water, no soda, nothing.

 Oh course, I don’t think this was the bride & groom’s intention, just an oversight.  A BIG one, nonetheless.  I’ve been a bride once or twice.. and I know how many little details can get overlooked.

NOW ONTO MY ADULTS ONLY – Bloody Mary Gazpacho Shooters….

I LOVE Gazpacho during the summer.  It’s a fantastic chilled soup made with fresh summer vegetables that tastes best if it’s chilled overnight.

It still feels like summer in Florida.  We recently had a foodie get-together called “One last summer day” and I was asked to bring a soup shooter.  Since the party was for adults only and I had no fear of kids accidentally consuming, I  decided to add the Bloody Mary part to put a little more FUN into this appetizer.  HUGE hit!

This recipe makes a good amount of soup. It keeps in the fridge for five days so you can keep enjoying..  Serve chunky or pureed, depending on your preference.  Since the flavors continually develop while it chills in the refrigerator, hold off on adding the vodka until just before serving time.  Another reason I don’t add the vodka until the end is because I share a fridge with 6 kids, My kids really like gazpacho…  I don’t want my kids getting drunk off of my soup.

Gazpacho Shooters

Note – Shooters take 2 ounces each and bowls about 8-12 ounces each, so servings will vary depending on use

Gazpacho Shooters

Ingredients

  • 2 ½ pounds Roma tomatoes
  • 1 large English seedless cucumber, chopped
  • 1 red bell pepper, chopped
  • 2 large garlic cloves, chopped or minced fine
  • ¼ cup finely diced red onion
  • ¼ cup extra virgin olive oil
  • 1 lemon, juiced
  • 1 lime, juiced
  • 6 tablespoons vinegar - sherry, red wine vinegar, balsamic or Braggs cider vinegar
  • 2 tsp worcestershire sauce
  • 8 oz V-8 Juice (or use vegetable stock)
  • 15 ounces tomato sauce
  • ¼ cup finely chopped fresh flat leaf parsley
  • 1 tablespoon finely chopped fresh oregano
  • 1 teaspoons kosher salt
  • 1/4 tsp teaspoon ground black pepper
  • 1/2 cup vodka (optional)

Instructions

  1. Roughly chop the tomatoes, cucumbers, bell peppers, garlic and red onions. Put into a food processor or blender and pulse until it is coarsely chopped. Do not overprocess!
  2. After the vegetables are processed, pour into large bowl along with olive oil, lime juice, vinegar, worcestershire, V-8, tomato juice, parsley, oregano, salt, and pepper. Mix well and chill at least 4 hours before serving, overnight is best. The longer gazpacho sits, the more the flavors develop.
  3. Before serving, stir in vodka. Rub the rim of each shot glass with a cut lime and dip the glass into a small plate of kosher salt or sea salt.
  4. If serving to kids - just leave the vodka out.

Notes

Optional garnishes – celery sticks, sliced cucumbers, cooked shrimp, avocado slices, lime wedges, chopped cilantro or parsley

I wanted to share with you my latest morning addiction I am making in this blender.  A Maple Pumpkin Pie smoothie.  It’s Creamy, healthy and taste just like a liquid pumpkin pie.  The frozen banana gives a creamy milkshake type base to this smoothie.  You can’t  even taste the banana with the addition of pumpkin puree and spices.  If you absolutely can’t stand bananas then I would suggest adding 1/4 c vanilla yogurt for more of a creamy texture.

Maple Pumpkin Pie Smoothie

Ingredients

  • 1 Banana, FROZEN & chopped
  • 1 c milk (almond, coconut, etc.)
  • 2 tbsp pumpkin puree
  • 1 tbsp REAL Maple Syrup
  • dash of pumpkin pie spice

Instructions

  1. Put everything into Single Serve Blender and blend until smooth.

It is my own accidental discovery.  It makes whip cream in just a few seconds.  Let me explain how I stumbled across this.  I was making a fall pear and apple crisp and needed some whip cream.  My beaters decided to stop working and I have “hand whipped” cream enough times to not ever want to do it again.  I really really wanted whip cream to be served on this dessert so I was searching all options before grabbing my bowl & whisk and getting a good arm workout for the next 10 minutes..  I glanced over to see the single serve blender on the counter.  Hmmm, I’ve made smoothies in this powerful little thing, I wonder if it will whip this cream. ….

It worked!!!  Just pour the heavy whipping cream in, pushed the button and seconds later I had beautiful whipped cream for my dessert.

If you are looking for a quick hot  lunch or a comforting sandwich to pair with dinner, this panini, packed with baby bella mushrooms, gooey swiss cheese, and sweet sauteed onions is a fantastic choice.

 I needed to make something fairly quick for lunch and since I still have 97 things left to check off my to-do list for the day, this worked out perfect.

This panini sandwich could easily be made vegan if you just omit the cheese.   This is what it looks like before adding the swiss.  Still looks yummy but I love my cheese…

It took 20 minutes to make from start to finish and 2 minutes to eat..  While the onions & mushrooms were cooking, I started prepping the sandwiches and heating the panini press.

I sautéed the mushrooms & onions separately and then added them back to the pan to heat together at the end.

up-close & personal.. Panini’s are “pressed” sandwiches that can be filled with anything you’d like.  This vegetarian version will satisfy even the biggest of meat-eaters..

I LOVE Ciabatta bread for Panini’s.  The outside gets crunchy while the inside stays soft.  It is the perfect bread choice for any “pressed” sandwich.

Caramelized Onion & Mushroom Swiss Panini

Ingredients

  • 4 tbsp extra virgin olive oil (divided)
  • 1 large sweet onion, thinly sliced
  • pinch salt
  • 1 tsp sugar
  • 6 oz baby bella mushrooms, sliced
  • 2 green onions or scallions
  • 3 ciabatta rolls, halved
  • 3 tbsp of dijon mustard
  • 6 slices Swiss cheese

Instructions

  1. Place 2 tablespoons olive oil into a sauté pan over medium-low heat. Add onions. Season with salt and add sugar. Continue cooking, stirring as necessary until onions have caramelized (appx. 15 min) Set aside.
  2. Add the remaining 2 tablespoons olive oil to another pan over medium heat. Add mushrooms. Cook for approximately 4-5 minutes. Add the caramelized onion and stir in scallions. Remove from heat.
  3. Heat your Panini press. Spread each ciabatta with 1 tablespoon of dijon mustard and distribute mushroom onion mixture between two slices of bread. Place 2 slices of Swiss cheese on each piece of bread.
  4. Lightly brush tops of bread with olive oil. Place sandwiches onto hot panini press. Cook for approximately 4-5 minutes until bread is toasted and cheese has melted.

Notes

If you don't have a panini press, you can use a cast iron skillet with a foiled covered brick or a george forman grill works great too.

Yummy, Yummy, Yummy!!!  One of my favorite “vegetarian” dishes.  But even meat eaters love this one.  Perfect for a meatless Monday or any other day of the week.  Lots of LOVE goes into this dish.

Baked Cheesy Spaghetti Squash

It’s gluten free and lo-carb so it appeals to lots of diets… It’s so darn good all of my kids like it and 5 out of the 6 of them don’t even like squash.

It’s easy to see why this was such a popular dish we served in the restaurant.  It’s bursting with Flavor and all kinds of cheesy goodness.

Just in case you are wondering… I don’t use the word “casserole” very often.  I don’t like the word… My mother was the casserole queen.. and I promise her’s didn’t taste as good as this.  I prefer the word “bake”.

FULL DISCLAIMER – One of the reasons this recipe taste so amazing is because majority of the ingredients are either roasted, caramelized or sautéed before baking.  If you were to copy this recipe but use raw ingredients, it just wouldn’t taste the same.

If  you aren’t a fan of goat cheese, you really won’t be able to taste it.  It adds to the creaminess.  If you are totally against the goat cheese and going to omit it, I would just increase the cream cheese to a full 8 oz block.

I’m able to put this together in a short amount of time because I always have roasted peppers, caramelized onions and roasted garlic on hand.  It’s easy to do and saves me TONS of time in the kitchen and adds incredible flavor to any dish.  I wrote a post on roasting the easy way.. No worries if you don’t have them on hand.. I have written the recipe from start to finish…

Baked Spaghetti Squash with Goat Cheese & Roasted Vegetables

Ingredients

  • Olive Oil for roasting
  • sea salt for seasoning
  • 5 cloves of roasted garlic (recipe to roast below)
  • 1 large spaghetti squash
  • 1 red pepper, chopped
  • 1 orange pepper, chopped
  • 2 onions, chopped
  • 1 zucchini, chopped
  • 4 oz cream cheese, softened at room temperature
  • 4 oz goat cheese, softened at room temperature
  • 2 eggs, beaten
  • 3 tbsp sundried tomato in oil, chopped
  • 2 tbsp herbs (parsley & basil)
  • 1 1/2 cups mozzarella cheese, shredded
  • 1/4 cups panko

Instructions

  1. Preheat the oven to 425 degrees F.
  2. to roast the garlic: cut the top off the head of garlic exposing a bit of each each clove of garlic. Place garlic head in a sheet of aluminum foil. Drizzle olive oil on top, sprinkle with salt. Wrap & Seal the foil around the garlic gathering at the top. Place in the oven and roast 375* for 30 or until completely tender when poked with a fork or knife. Allow to cool, remove from foil. set aside
  3. Halve the spaghetti squash, scoop out the seeds and loose fibers. Drizzle with olive oil, sprinkle with salt and bake 425* 30-40 min until tender. Remove from the oven and let rest until cool enough to handle. Using a fork, scrape out the squash which resembles strands of spaghetti and place in bowl.
  4. Arrange the chopped peppers & onions on a sheet pan, drizzle with olive oil, sprinkle with salt and roast 425* 20-25 min stirring occasionally until tender and edges start to brown.
  5. In a saute pan, heat 1 tbsp olive oil and sauté the zucchini for 2-3 min until tender. set aside
  6. Squeeze out 5 garlic cloves from the cooled head of garlic and smash into a paste
  7. In a LARGE bowl combine the cream cheese, goat cheese & eggs. Mix together. Add the cooked spaghetti squash, peppers, onions, zucchini, smashed garlic cloves, sundried tomatoes, herbs & mozzarella cheese.. Stir well to combine. Pour into a casserole dish and top with panko.
  8. Bake 350* for 20-30 min until golden on top.

We LOVE Nachos! It’s a quick dish to prepare and a great appetizer for movies or game night.

The last time I posted a nacho recipe, it was Pizza Nachos.  You can see it HERE.

You can Taylor-Make just about any recipe (except when baking) and Nachos are a perfect place to start.

BBQ Cheddar Nacho

The tortilla chip is just the vehicle for any delicious toppings you can dream up.

My kids love BBQ anything and its been a busy place around here lately so a quick meal is what I needed.

This is such a simple dish to put together.  Takes 5-10 min of oven time.  The only real time invested is the caramelizing of the onions.  I happen to have some leftover from yesterday so I can skip this step.

You might even have the ingredients on hand

BBQ Bean & Corn Nachos

Black Beans, Corn, caramelized onion, cheddar cheese, green onion & BBQ Sauce

These would be great with ground beef, shredded pork, chicken or bacon but Momma is eating this tonight so I’m keeping it vegetarian.

BBQ Black Bean, Corn & Cheddar Nachos

BBQ Black Bean, Corn & Cheddar Nachos

Ingredients

  • 1 large onion, chopped
  • 1 tbsp olive oil
  • 1 can black beans, drained
  • 1 can corn, drained
  • 4 cups Your Favorite Crispy Tortilla Chips
  • 2 cup Cheddar Cheese, Shredded
  • 1/2 c your favorite BBQ sauce
  • 2 green onions or scallions

Instructions

  1. Start by caramelizing the onions on medium heat, stirring occasionally until tender about 10 min. Add black beans, corn + 1 tbsp of BBQ Sauce, stir together.
  2. When you are ready to make your nachos, preheat your oven to 400ºF.
  3. I used a cookie sheet but any oven-proof dish will work . First add half your chips, top with half of the shredded cheese & half of the black bean & corn mixture. Add another layer of chips and add the remaining cheese and the final layer of bean & corn mixture.
  4. Bake until the cheese is nice and bubbly 5-7 minutes. Remove from oven and drizzle with BBQ sauce. Top with scallions or green onions

Notes

If your BBQ sauce is really thick. You can thin it out with honey or a few drops of water.

Pumpkin Peanut Butter Dog Treats

Ingredients

  • 2 cups Whole Wheat Flour
  • 1 cup rolled oats (grind into a powder using a blender)
  • 2 large eggs
  • 1/2 cup peanut butter
  • 1/2 cup Pumpkin puree
  • 1/2 cup cold chicken stock, beef stock or water

Instructions

  1. Put all the ingredient together and mix in one direction for 3 minutes. Then roll out to about 1/3 inch, and cut into whatever shape you prefer. Bake 250* 15-20 min until the treat just starts turning light brown in color.
  2. store them for about 2 weeks in an airtight container.

I LOVE Granola.. I have made it lots of ways, even a RAW Granola.  Some have nuts and dried fruit and even chocolate.    There are limitless options when making granola.  I LOVE coconut and Almonds so thats the Granola I decided to make today.   Jar of almond oatmeal

 I wanted to make this a healthier version by replacing sugar in a traditional recipe with maple syrup and replacing the vegetable oil with coconut oil.

Feel free to add your own additions.  Cranberries, Raisins, Dried Cherries, dried blueberries, almonds, cashew, walnuts, pecan.

Heart Healthy Granola

This granola is awesome with some milk for a quick breakfast cereal, added to parfaits with yogurt & fruit or just a crunchy sweet snack.

Coconut Almond Granola

Ingredients

Instructions

  1. Preheat oven to 275 degrees F.
  2. In a large bowl combine brown sugar, maple syrup, coconut oil, and salt.
  3. Add the oats, almonds and coconut. Combine until mixed well.
  4. Spread mixture on 2 sheet pans. Bake 1hr or until golden brown and toasty stirring every 15 minutes. Remove from oven, allow to cool and transfer to an air-tight container.

I usually make a double batch and store in a jar like the one below… You can also use a mason jar or a ziplock bag.  Just keep the air out.  Here’s a tip: If it starts it get stale you can crisp it back up in the oven for a few minutes. homemade coconut almond granola

On a side note: I just LOVE LOVE LOVE coconut oil. It has sooooo many health benefits.  I use it on lots of things.  LOTS!  Even an all natural sunscreen/oil that smells AMAZING.  I use it as a body scrub mixed with granulated sugar or coarse salt.  It does wonders for chapped lips, it’s a natural antibiotic and I cook with it a lot.

You can replace the butter in a cookie recipe with coconut oil for a healthier fat alternative without compromising the texture and flavor.  Here’s a chocolate chip cookie recipe that are made with coconut oil and pass the kid approval test.
