Roasted Balsamic Broccoli with Parmesan

This broccoli might not be beautiful but it sure is delicious.. The balsamic caramelizes the broccoli and takes away the vibrant green color but it taste soooo good.  My kids love when I make broccoli this way.. Roasting brings out the natural sweetness in ANY vegetable. I love roasting just about everything.

The Balsamic Vinegar cooks down to a delicious sweet reduction.  Super simple and fast side dish.
You could also make this a vegan dish by omitting the cheese.

Roasted Balsamic Broccoli with Parmesan


  • 4 c broccoli florets
  • 1/4 c extra virgin olive oil
  • 1/4 c balsamic vinegar
  • Salt & Pepper
  • 1/4 c freshly grated Parmesan cheese


  1. Preheat oven to 425*
  2. Place broccoli on a large sheet pan.
  3. Drizzle the olive oil & balsamic vinegar over the broccoli. Season with salt & pepper. Toss to coat.
  4. Place on top rack of oven and roast for 20 min or until tender.
  5. Remove from oven and sprinkle the Parmesan over the broccoli.
