Roasted Eggplant Hummus

Baba ganoush (sometimes spelled baba ghanoush), is a Middle Eastern spread and dip that is similar to hummus, but is made with eggplant instead of chickpeas (garbanzo beans).

So if Baba Ganoush, (roasted vegetable spread) and hummus had a baby – here is what it would be.

This recipe is vegetarian and vegan. Super healthy & easy to make.  Would be great for a side dish with lunch or a perfect appetizer.

Roasted Eggplant Hummus

Ingredients

  • 1 large eggplant (about 1 pound)
  • 1 sweet onion
  • 2 cloves garlic, minced
  • 1/4 c extra virgin olive oil
  • 1/4 teaspoon sea salt or kosher salt
  • 1 can chickpeas, drained (garbanzo beans)
  • 1/4 c lemon juice, fresh
  • 3 tablespoons tahini
  • 1/4 cup finely chopped fresh flat-leaf parsley, plus more for garnish
  • Salt & Pepper to taste

Instructions

  1. Preheat the oven to 425 degrees F.
  2. Cut the eggplant and onion into 1-inch cubes. Spread them on a baking sheet. Toss them with the garlic and olive oil. Sprinkle with salt.
  3. Roast for 35-40 minutes, until the vegetables are lightly browned and tender, stirring once during cooking. Allow to cool
  4. Place the vegetables in a food processor along with the chickpeas. Add the lemon juice, tahini and parsley. pulse and blend to desired consitency . Some like it chunky, others like it completely smooth - Taylormake it your way.
  5. Season to taste with salt & pepper. Garnish with extra parsley.
  6. Serve with pita bread, crackers, toast, sliced baguette, celery, or cucumber slices.

You can peel the eggplant if you don’t like the look of the skin, however I never peel it.  Saves a step, lots of time and I was always told theres tons of vitamins and nutrients in the skin.

Make the same recipe – Just adjust

Like it spicy? Add a pinch of cayenne

Like it smoky?  Add a pinch of cumin or some smoked paprika

Like Italian flavors – Roast some red pepper along with eggplant – then add sundried tomato & fresh basil to the food processor

don’t like beans?  just omit them and use half the amount of lemon juice for a delicious Roasted eggplant spread
