Tomato Davinci – Heirloom tomato savory bread pudding
I originally created this recipe a few years ago after having TONS of fresh tomatoes from our garden and some stale bread. Sounds delicious right? But It was an instant winner. Super simple & easy recipe. Absolutely perfect for Spring & Summer.
Just about all children LOVE pizza and My kids really like this recipe because they say It taste just like Pizza. Besides getting rave reviews at home, This was another popular side we used to have on the TaylorMade Menu in the cafe. I know there will be a few happy customers when they read this blog post since they would always order it… (I know, I know it is not the TaylorMade Tomato Tarts Recipe – that will be a future post)
This is a lovely way to use stale bread (toast it if the bread is soft) or when you have fresh farmers market tomatoes. You can use any kind you like, I have made this recipe with red, yellow & orange tomatoes, grape tomatoes, heirloom tomatoes – just about every tomato EXCEPT canned..
I’m going to show you 2 versions of this recipe.. The one I made at TaylorMade Market and a lighter version that can be made quickly at home if you do not have caramelized onion & roasted garlic on hand.
Ingredients
- ¾ of a ciabatta loaf
- 2 eggs
- 1 c half & half
- ½ c onion, caramelized
- 3 cloves garlic, roasted & mashed
- 4 c fresh tomatoes, chopped
- 2 tbsp of sun dried tomatoes in oil, chopped
- Fresh herbs – (I used Parsley, Basil & Thyme)
- Salt & Pepper
Instructions
- Preheat oven to 400*.
- Cube the ciabatta bread and spread on sheet pan.
- Toast in oven for a few minutes until crispy.
- In a large bowl, beat eggs, half & half, add caramelized onion, roasted garlic, chopped tomatoes, fresh herbs, salt & pepper. Stir to combine.
- Place toasted ciabatta cubes in a baking dish and pour mixture all over covering the cubes.
- Allow 2-3 minutes for bread to absorb liquid.
- Bake 350* for 25 – 30 min.

- 2 cloves garlic, minced
- 2 tbsp extra virgin olive oil
- 2 eggs
- ½ c vegetable stock
- ½ c nut milk (almond, coconut, etc.)
- 4 c fresh tomatoes, chopped
- 2 tbsp of sun dried tomatoes in oil, chopped
- Fresh herbs – (I used Parsley, Basil & Thyme)
- Salt & Pepper
Instructions
- Preheat oven to 400*.
- Cube the ciabatta bread and spread on sheet pan. Toast in oven for a few minutes until crispy.
- Drizzle the olive oil in a skillet, add onion & garlic. Sauté until soft. Remove from heat. set aside.
- In a large bowl, beat eggs, stock and milk. Add sautéed onions & garlic, chopped tomatoes, fresh herbs, salt & pepper. Stir to combine.
- Place toasted ciabatta cubes in a baking dish and pour mixture all over covering the cubes.
- Allow 2-3 minutes for bread to absorb liquid.
- Bake 350* for 25 – 30 min.
TaylorMake this recipe the way you like. I made it will Italian flavors. Other savory suggestions: Mediterranean – Roasted Peppers, olives & Feta cheese would be delicious – You could go Mexican with Black Beans, corn and cilantro for those of you who like that soapy tasting herb.
