English Peas & Toasted Coconut

 I always have a bag of peas in the freezer.. For a last minute quick dinner fix of Chicken & Yellow rice, to a simple soup or side dish.   At the minimum a bag of frozen peas is always good for a kids sprained ankle or a mothers migraine.

English Peas & Toasted Coconut is a Super simple side dish.

I love making dishes with minimum ingredients.  You just need a bag of frozen English peas, coconut, garlic and some olive oil.

I toast the coconut in a dry pan and then put in a bowl.. In the same pan, drizzle the olive oil and add the garlic stirring for 20 seconds, add the peas and heat through.  Add the toasted coconut at the end and toss together.

English Peas & Toasted Coconut

Ingredients

  • 1/2 cup shredded unsweetened coconut
  • 2 tbsp olive oil
  • 1 clove garlic, minced
  • 1 pkg english peas, frozen

Instructions

  1. Toast the coconut in a dry pan 3-4 min while stirring until toasty. remove from pan & set aside. In the same pan, drizzle the olive oil and add the garlic stirring for 20 seconds, add the peas and heat through. Add the toasted coconut at the end and toss together.

I used unsweetened coconut.  You could use either, just know your final dish will be sweet if you use the sweetened coconut flakes that you find in the baking section

If you have extra toasted coconut left over it’s AMAZING on top of ice cream.  You can also Top yogurt or parfaits with toasted coconut.
